Massaged Kale Salad- Delicious & Nutritious!
Kale is the superfoods of superfoods! And we know it can be daunting if you want to add it to your diet, but don't know how to properly prepare or make it. It can really put you off if the flavours are not properly matched with this dark leafy green.
To properly digest and absorb all it's amazing nutrients, you must massage your kale first. Yes, give those greens a loving rub down. Your body will be thankful for it.... and so will the kale.
Kale can have a strong green sort of grassy taste if you're used to it; and to some it's not their thing, but we like to think it's because it wasn't properly handled.
Roz whips up an insanely, delicious kale salad that is so fast and easy to make, you will be making this more than you think. It is oil free, as the tahini is a natural fat and much healthier than any oil, seasoned perfectly with a light drizzle of tamari and to give that slight acidic edge that kale needs, she adds apple cider vinegar. Your body will be buzzing with happiness from all the healthy vitamins and nutrients racing through you after you eat this.
To make this more of a meal, she adds marinated tofu steaks, slices of avocado and tomatoes, then sprinkles hemp hearts and dried cranberries. The tofu alone is delicious, so if you are somehow STILL not feeling the kale; which is an absolute travesty, you would be insane to say this tofu is not delicious. Cause honey, IT IS! You will need:
Serves 2
Kale Salad
1 bunch Kale, removed from stocks, ripped, washed and dried
2 tbsp. Tahini
1 tbsp. Apple Cider Vinegar
Splash of Tamari *Season to taste **if you don't have tamari, soya sauce will do the trick
1 tsp. Olive Oil *Optional
In a large bowl with the kale, add all the remaining ingredients.
Massage everything till kale leaves are wilted, about a few minutes.
Set aside and work on the tofu.
Marinated Tofu
175 gr. Firm Tofu, sliced into 8 1/4" thick, pat dry
1 tbsp. Maple Syrup
1 tsp. Sriracha
1/2 tsp. Tamari *Again, soya sauce is a great substitute if you don't have tamari
2 tbsp. Tomato Paste
1/2 tsp. Smoked Paprika
1/2 tsp. Onion Powder
1/4 tsp. Garlic Powder
Lime Juice to taste * Start with a 1/4 of the lime juiced. This is to brighten the flavours
2 tsp. Olive Oil
Lay the dried tofu steaks on a plate.
In a bowl mix all the remaining ingredients; minus the oil, together and spread over the tofu, covering both sides.
Heat a pan on medium high and add the oil.
Add the tofu and sear for two minutes on both sides.
Additional Accouterments:
1/2 Avocado, sliced
1 sml. Tomato or 10 Cherry Tomatoes, sliced
Hemp Seeds
Dried Cranberries
Fresh Cracked Black Pepper
Divide your kale salad in two big salad bowls.
Add a quarter of sliced avocado to each bowl, spreading it along the sides.
Add the sliced tomatoes to each bowl, doing the same thing as you did for the avocado.
Give each bowl four slices of tofu, and finish off with a sprinkle; how little or big you want, of hemp seeds and dried cranberries.
And lastly, crack some pepper onto the tomatoes and avocado slices.
