Breakfast Waffle Sandwich- EPIC VEGAN MEAL!!
We are so excited to introduce you to our new series, EPIC VEGAN MEALS! Where we will be taking everyday recipes that everybody loves, but putting a twist on it and making it EPIC!
It all started when Lo was on her travels down south to Mexico City, where her husband had a waffle sandwich for breakfast and she was jealous because she couldn't have one for they didn't offer vegan ones. So she thought to herself, "I'm gonna vegan that sh*!t!".
Lo wanted to bring this concept to the vegan community and make it more breakfasty.
So! Without further ado, Lo gives you the BREAKFAST WAFFLE SANDWICH!!!
It has all the components you would be looking for for in an EPIC breakfast. Tender, crispy waffles, "cheezy" eggz, smoky bay-con, creamy avocado and sweet, heavenly maple syrup with a hit of heat from siracha. Hitting all the marks, sweet, savoury, carby and FUN, this meal does NOT fail. It would impress anyone and you would be loved by everyone. Legit, people will be kissing your feet and praising you with high fives and kisses.... or whatever.
Don't let this scare you or think this is really hard to make, cause it's not. It's actually quite easy. Just stare that b*$@h in the face and say, "let's stop dick'n around and DO THIS!"

You will need:
This makes 2 sandwiches
oven @ 200F
Waffle maker setting on high
For the Waffles:
3 cups All Purpose Unbleached Flour
2 tbsp. Coconut Sugar
2 tsp. Salt
5 1/2 tsp. Baking Powder
2 medium sized Bananas, mashed *You need 1 cup of mashed banana
2 1/2 cups Almond Milk *or your preferred plant based milk
6 tbsp. Vegetable Oil *or Coconut Oil if you prefer
Pre-heat waffle maker to high setting. Now, all waffle makers are different, but on mine, I put the setting to high and I get the perfect golden colour and crisp. So, if you know you can achieve that on a lower level, go for it!
Whisk all the dry ingredients in a big bowl.
In another bowl, mix all the liquids together.
Make a well in your dry ingredients and pour the liquid mixture in the middle.
Mix till all the lumps are out, but don't over mix.
Very lightly grease your waffle maker and pour one cup of better in the middle and gently spread the batter closer to the edge.
Close lid and cook for 15 minutes.
Once your waffle is cooked, place on a tray and keep warm in your already pre-heated oven.
Make all waffles before moving on to the next steps.
For the Tofu Scramble:
1 cup Firm Tofu, crumbled
1/2 tsp. Tumeric
1/2 tsp. Garlic Powder
1/4 tsp. Dried Thyme
1 tsp. Black Salt
1 tsp. Nutritional Yeast
*Black Pepper is an option if you prefer
2 tsp. Olive Oil
2 tbsp. Coconut Milk
2 tbsp. Water
2 slices, Vegan Provolone Cheeze
Mix the tofu with all the spices.
Heat a pan on medium heat and add the oil.
Cook the tofu for a few minutes till heated through.
Pour the coconut milk and water and cook a minute till the liquid has slightly evaporated. You want it to be a little runny, like an egg. Push everything to the middle of the pan to form an even mound of scramble.
Place the slices of cheeze on the tofu and place a lid on to cover.
Turn heat down and melt the cheeze, this will take a few minutes.
Once melted, remove from heat and set aside.
Additional Accoutrements:
6 slices of Tofu Bacon, fried to perfect crispyness
1 Avocado, sliced
1 Green Onion, thinly sliced
Vegainaise
Sriracha Maple Syrup
4 slices Vegan Cheddar Cheeze
Heat a pan with a little oil and fry the bacon as package suggests.
To make the syrup, mix 2 tbsp. of sriracha with 1 cup maple syrup and mix!
Slice the avocado thinly and set aside.
Assemble Time!
Place your rack on the top level and turn your oven to broil HIGH.
Take two waffles (these will be your bases) and put on a baking sheet.
Evenly place the tofu scramble on the waffles and place two slices on top of the each scramble on each waffle.
Put under the boiler to melt the cheeze. This melts fast, so pay attention and don't burn!
Pull out and put on the plates you are serving on.
Place three slices of bacon on each waffle with the tofu scramble and melted cheeze.
Drizzle syrup to get the party started. Put as much or as little you want.
Fan the avocado slices on top of the bacon.
Sprinkle the green onions on top.
Take the veganaise and spread as much or as little as you want on the top waffle and lay it veganaise side down on top of the avocado slices.
NOW! Drizzle more syrup on top. And again, as much or little as your heart desires!
And there you have it... an EPIC VEGAN MEAL!
