Corn Chowder- Oil Free!


It's the new year and man! It. Is. Cold. So cold that your body will be craving warm and hearty foods, foods that will make you feel full and satisfied. Comforting carbs, big bold flavours and stick to your ribs food!

That's why we give you.... CORN CHOWDER!!!

Our corn chowder is full of nutrient dense veggies, potatoes and oil free! So you can have two or three bowls and not feel guilty about it.

We also add a spiced chickpea and corn topping that adds that extra flavour and additional protein that will make you feel fuller longer.

You will need:

This makes 5L of soup

Oven at 425 degree F

For the Soup:

5 cups Frozen Corn Niblets

3 stalks of Celery, medium chopped

1 Red Pepper, medium chopped

6 md. or 2 lg. Carrots, medium chopped

1 lg. Cooking Onion, medium chopped

5 md. Yukon Gold Potatoes, medium cubed

2 lg. Garlic cloves, finely chopped

3 cups Vegetable Stock + 2 tbsp to cook with the onion

3 cups Water

1 tbsp. Tamari or Soya Sauce

1 tsp. Fresh Thyme, chopped

1 tsp. Smoked Paprika

1 1/2 tsp. Chili Powder

1/2 tsp. Cumin

Salt and Pepper to taste

Heat large pot over medium high heat.

Add the onion with the 2 tbsp of vegetable stock to cook the onions till transparent, 5 minutes.

Add the garlic and spices and cook for a minute. * If it starts to look dry, add dribbles of water to cook in.

Add the celery, carrots, red peppers, potatoes and corn to the pot, and give it a good stir.

Add the fresh thyme and the liquids.

Cover and bring to a boil.

Once brought to a boil, turn down to simmer and cook for 30 minutes.

While the soup cooks, prepare the chickpea and corn garnish.

Once soup has cooked, turn off heat and remove from the stove.

Place in blender or use a hand blender and blend till smooth.

Add the tamari or soya sauce.

Season with salt and pepper to your liking.

Chickpea and Corn Garnish:

1 can 348ml. Chickpeas

1/2 cup Frozen Corn Niblets

1 tsp. Chili Powder

1/2 tsp. Onion Powder

1/2 tsp. Smoked Paprika

1/2 tsp. Garlic Powder

Tamari or Soya Sauce

Vegetable Broth

Salt to taste

In a large bowl mix chickpeas, corn and the spices together.

Drizzle lightly with tamari or soya sauce and vegetable broth and mix.

Place on a baking sheet and season with salt.

Bake for 15 minutes.

Place the soup in your favourite bowls and top it with the chickpea and corn garnish!
