We wanted to share with you another quick and easy recipe that you can whip up for any holiday occasion!

Candy Cane Ice Cream!

Christmas is the time of year when we all start to feel nostalgic about holiday traditions and holiday treats. When Lo was a little girl she LOVED candy cane ice cream so much!!! That's why she thought it only made sense to give you, candy cane ice cream. It's so fast and quick to make, you can eat it in 10 minutes! You can be sitting on the couch, all cozy in a blanket, drinking wine or a hot apple cider, when all of a sudden you get a hankering for a yummy treat... you can make this and be eating it within minutes.

Creamy vanilla ice cream engulfing candy cane bits and dark chocolate chunks will dance in your mouth and fill your belly, leaving you happy and content.

AND! If you have little kids, trust us when we say this, they will love it! Or, if you are hosting Christmas dinner this year and there are little kids, you can make this for the kid's desserts.

You will need:

473 ml carton of your favourite Vanilla Plant Based Ice Cream- We used Coconut Bliss

4 Candy Canes

20 oz. Dark Chocolate

Your favourite cookies to garnish

Bring the carton of ice cream out of the freezer and leave on the counter to warm up a bit, 10- 12 minutes.

In a food processor, add the candy canes and crush till it looks like medium-small sized crumbs.

Add to a mixing bowl.

Add the chocolate to the food processor and pulse till they resemble medium sized crumbs. DO NOT run the food processor continuously, as you run the risk of melting the chocolate.

Add this as well to the bowl.

Scoop out the ice cream into the bowl and mix it together.

NOW! You can eat it as is, but know it is more a soft serve consistency or add it back to the ice cream tub and freeze for an hour to harden back up.

Serve with your favourite cookies!

Enjoy!
