Holiday Rice Crispy Treats- Quick & Easy!


As much as we love to eat healthy, we also love to spoil ourselves with fun treats now and again. And what perfect time of the year is that perfect for? CHRISTMAS!

We are also big fans of quick and easy recipes during the holiday season as this is probably one of the most hectic and insane times of the year. With work wrapping up for the year and everyone racing to finish up for the holidays, work is STRESSFUL AF! Parties to attend, parties to throw, crazy family visits, baking for parties and gifts, Christmas shopping; whether that is for gifts or dinner parties, it's all overwhelming and crazy. Let's not mention the stress we can also go threw, worrying about bonuses and raises, year end reviews, not having enough money to give your family a special and magical Christmas.... it can be too much. Christmas for most people is a sad and stressful time, but for others it's not. SO! Where are we going with this?

Rice Crispy Treats are not only delicious to eat, but they are super quick and easy to whip up and CHEAP! You will need:

Makes 12

1 pkg. 283gr. Vegan Vanilla Marshmallows

5 cups Rice Crispy Cereal

1 tbsp. Coconut Oil

2 tbsp. Vegan Butter

1/8 tsp. Vanilla Extract

1/2 cup Dark Chocolate, Melted

Festive Sprinkles

In a large pot, heat on medium low.

Melt the butter and coconut oil.

Add the vanilla and marshmallows.

Melt the marshmallows and constantly stir, so they don't stick and burn. This will take a little more then 10 minutes.

Once all melted, stir in cereal.

While working fast, push the cereal mixture into un-greased muffin tins. This all divides perfectly into 12 muffin tins.

Let cool while you melt the chocolate.

To melt the chocolate, fill a small pot with a cup or two of water and place a glass or metal bowl on top. This is called a Bain Marie. The steam from the water will melt the chocolate in directly from the heat. This is so you don't burn the chocolate. Turn the pot of water to medium.

Carefully remove the bowl and don't get any water in the chocolate as this will cause the chocolate to seize and not be smooth to work with.

Remove the rice crispy treats from the muffin tins and place them upside down on a cooling rack that is on top of a baking sheet.

Drizzle the chocolate and sprinkle with your festive sprinkles.

Place in fridge for 20 minutes till chocolate is hard.

And there you go! You have perfect little treats to eat!

It's a Christmas miracle!
