Vegan Spiced Molasses Cookies!- Quick & Easy!
Fall is one of the most loved seasons for most of us. It is the perfect balance of chilly mornings and nights with warm, sunny days. The foliage are beautiful colours. Fuzzy socks. Pumpkins (mostly pumpkin spiced foods). Warming teas. AND hearty dishes and treats!
Fall is the kick off to some of the best types of treats. All the big, bold flavours are welcomed and enjoyed immensely. Anything spiced is loved by all.
That's why we give you.... SPICED MOLASSES COOKIES!
These little pillows of heaven are the perfect mix of spices with the earthy taste of molasses and not too sweet, so you are know they are healthier. The added crystallized sugar adds a nice crunch, which balances nicely with the soft and tender centre to these cookies.
So! Curl up on that big, comfy couch, wearing cozy sweats and fuzzy sucks, suck'n back a hot chocolate with these cookies. Trust us when we say, you can eat 6 of these no problem!

You wil need:
Oven at 350F
Makes 17 cookies
1/3/4 cup Whole Wheat Flour
3 tbsp. Fancy Molasses
2 tbsp. Almond Milk + more to dribble in *Or any plant based milk you prefer
1/4 cup Coconut Oil
1/2 cup Coconut Sugar
1 tsp. Vanilla Extract
1 tsp. Ground Ginger
1/2 tsp. Ground Cinnamon
1/2 tsp. Nutmeg
2 dashes of Ground Cloves
1 tsp. Baking Soda
1 tsp Baking Powder
1/4 tsp. Salt
Crystallized sugar or Demerara Sugar for the top
Whisk the flour, all the spices, baking powder, baking soda and salt in a bowl.
In another separate bowl, mix the sugar with the coconut oil till incorporated.
Add the almond milk, vanilla extract and mix till the sugar has dissolved, 2 minutes.
Add the molasses and mix till incorporated, 1 minute.
Add the flour mixture to the liquid in the five parts. Mix till incorporated.
You will notice that your mixture will start to get a little dry around the fourth batch of flour. It will get hard to mix, just take a little more almond milk and dribble it in to help moisten the batter.
Add the last bit of flour and mix till mixed in. If it is still a tad dry/crumbly add a tiny bit more almond milk to smooth it out. You are look for a stick dough, but that is still moist, but not sticky.
Grab a bowl with a little bit of water to wet your hands so the dough doesn't stick to your hands when you go to roll a tbsp. size of batter into a ball.
Place on a lined baking sheet and press down lightly.
Sprinkle crystallized sugar on top.
Place in oven and bake for 12 minutes.
Cool on rack.
