Fajitas- Quick & Easy Dinner!


Fajitas are probably one of Lo's go-to meals during the week. They are fast and super easy to make.

You don't need much to make fajitas. Peppers and onions will do just fine if you don't have mushrooms, but mushrooms are a great vegetable to add, as they are tasty and filling. You can even add refried beans for extra protein to your fajitas.

Not only will you be making crazy tasty fajitas, but you will be making TWO salsas!! These salsas add to the experience of eating fajitas. The fun thing about Mexican food; even though fajitas are more Tex-Mex, you gotta have salsas and condiments. The salsas brighten up each bite and send your mouth on a flavour explosion!

These fajitas are so tasty that they would even WOW your friends and family if you were having a casual dinner party or bbq. Serve it family style and everyone can have fun building their fajitas.

Your best friend will take one bite and scream, "SABROSO!!! That's a fine fajita!"

Serves 6 Fajitas

You will need:

Fajitas

1 1/2 Red Peppers, thickly sliced

1 Green Pepper, thickly sliced

2 lg. Portobello Mushrooms, peeled and de-gilled and thickly sliced

1 lg. Red Onion, thickly sliced

2 tsp. Garlic Powder

1 tsp. Dried Oregano

1 tsp. Chili Flakes

2 tsp. Paprika

1 tsp. Chili Powder

1 tsp. Cumin

Salt and Pepper to taste

4 tbsp. Olive Oil

1/2 cup Shredded "Mozzarella Cheese"

3 Green Onions, Chopped

6 Flour Tortillas

1 can Refried Beans *Optional

Cilantro leaves for garnish

Lime for garnish

Avocado Salsa

1 Avocado, mashed

1/4 cup Pickled Jalapeños, chopped fine

Salt and Pepper to taste

Cashew Cream

1 cup Raw Cashews, soaked 20min-2 hours before

1 cup Coconut Milk

2 Cloves of Garlic

2 tbsp. Apple Cider Vinegar

Salt and Pepper to taste

First! Start with the salsas!

Mix all the ingredients for the avocado salsa and season to liking.

Chill in the fridge.

Drain the cashews and place in a high speed blender with the remaining ingredients.

Blend till smooth and season to taste.

Chill in the fridge.

Heat a pan to medium high till HOT!

Add oil and all the veggies.

Sauté and try not to stir too much. You want colouring, but you don't want to burn them.

Cook for 10 minutes. You want your veggies caramelized and a little soft.

Add all the spices and and salt and pepper.

Cook for another 2 minutes.

Turn heat down to low and place shredded cheese on top and place a little water in the pan to create steam once you add the lid.

Melt the cheese for a few minutes.

Remove from heat once cheese is melted and bubbling.

Garnish with green onions.

Heat your tortillas in a dry pan.

*If you are serving this with refried beans, heat them up either on the stove or in the microwave.

Serve the fajitas with the salsas and the fresh cilantro and lime AND a nice cold beer!!! Que Rico!
