Seaweed Salad Rolls- Quick & Easy!


Who doesn't love salad? We all love salad; but truthfully it can get a bit boring sometimes, but all it takes is a little thinking out side the box and shaking it up a bit to make salad more exciting.

Seaweed; or also known as Nori, is full of flavour and great for your health; just make sure it is organic, non-GMO and MSG free, so Lo thought, "Maybe salad inside a nori wrap would be tasty?! ". The combination of the fresh veggies and crunchy nori, create a flavour burst in your mouth. And! To top it off, Lo paired it with a kick ass dipping sauce that brings everything together perfectly.

You could make this as an appetizer for a dinner party and be the star of the show. A great idea would be to pair it with a crisp, white wine, and serve it with our Pad Thai Noodles as the entree. Before you know it, people would be inviting you to dinner parties left right and centre, asking you to bring all your killer delicious meal ideas.

You will need:

1/2 cup Raw Cauliflower, chopped in food processor to resemble the look of rice

1 Avocado, thinly sliced

2 Carrots, thinly sliced

1/4 English Cucumber, peeled and thinly sliced

4 leafs of Romain Hearts, sliced

10 Asparagus stalks, blanched

4 Seaweed / Nori Wraps

Makes 4 servings

Bring a pot of water to boil and cook the asparagus for 2 minutes. After 2 minutes, drain and run under cold water till cool to touch.

Chop the cauliflower in the food processor till it resembles a rice like texture.

Prep the rest of your veggies.

Place the rough side of the seaweed up and the smooth side down.

Spoon the cauliflower down on one inch of the surface, then place the asparagus, carrots, cucumber, avocado and lettuce on top of each other.

With water, wet 1 inch of the seaweed and roll the veggie side till it resembles a burrito and the wet side sticks together. You want the seam of the roll on the bottom.

Slice in half!

For the Dipping Sauce:

2 tsp. White Sugar

1/4 cup Rice Wine Vinegar

1 stp. Sriracha

1 tbsp. Tamari Sauce

pinch of Chilli Flakes and 4 leaves of Basil sliced.

Mix everything together!!

Eat this on a hot summer's evening with friends and just take it easy.
