S'mores Pie- Avocado Chocolate Pudding!


When you think of s'mores, what do you think? Sitting around a roaring campfire with friends or family, toasting marshmallows, and placing that gooey, toasted marshmallow between graham crackers and milk chocolate. Well, what if you can't go camping or attend a hipster bbq where someone has a fire pit? That shit ain't fair! You want part of that hot mess! I mean, no summer is complete without a get away into the great outdoors.

That is why we give you... S'mores Pie! It has all the components of a s'mores, but achieved in your kitchen and enjoyed in your home (or wherever you want).

It's so fast, it's a joke. The only thing you bake is the crust and that only takes 10 minutes! What we love even more about this recipe is that the chocolate pudding is made from AVOCADOS!!! We kept it on the richer side; not too sweet, because the crust and marshmallows are sweet and balance out the rich chocolate filling. In total, this takes under an hour to make! For a pie, that's crazy fast.

Serves 8

Time: Including prep- 1hr

For the crust you will need:

Oven: 350 degres F

1 3/4 cup Graham Crackers, crushed finely

1/4 cup White Sugar

1/2 tsp. Cinnamon

6 tbsp. Vegan Butter, melted

Salt, pinch

In a food processor, crush graham crackers, sugar, cinnamon and cinnamon till fine.

Pour melted butter and cinnamon mixture into a bowl and mix till incorporated. If your mixture is not appearing like it will stay in place when pressed together, dribble a little bit more melted vegan butter till it binds. Literally, drops, not tsp or tbsp..... otherwise it will be greasy and creepy once cooked.

Place it into your pie plate and with your hands, push it to form a crust. It doesn't have to be pretty, just make sure there aren't any cracks and evenly pressed into place.

Place into the oven and cook for 10 minutes.

Cool 30- 40 minutes on the counter.

For the Chocolate Avocado Pudding you will need:

3 medium perfectly ripe Avocados

8 tbsp. Cocoa Powder

7 tbsp. Maple Syrup

1/4 cup Vanilla Almond Milk *Or any plant based milk you like

2 tsp. Vanilla Extract

Salt to taste

Again, in your food processor, place all the ingredients and blend till smooth and creamy.

This could take 3 minutes. You are looking for all the lumps and bumps to disappear. Also, make sure there aren't any green lumps showing.

Place in the fridge to chill while your crust is cooling

Finishing touches:

Vegan Marshmallows, as many as your heart desires, quartared

Once your crust is cooled, place the pudding into your crust and spread evenly.

Add your marshmallows on top of your pudding.

If you have a bad ass torch like Lo, torch the marshmallows and have fun with how much or how little you want them charred. If you don't have one, get one! But honestly, you can achieve this by turning your oven on to high broil, placing the rack to the top, under the coils and broil for a minute or so. It will charr very fast, so watch it!

And there you have it! S'mores Pie!!!
