Watermelon Gazpacho- Oil Free!
So it's a hot summer's day and you're sweating from head to toe, and the thought of standing over a hot stove, slaving to make dinner could make you lose your shit. Well, sweat no more! For we have the solution to those hot sweaty evenings.
Gazpacho! It is probably one of the easiest meals you can make. It's a bunch of flavourful ingredients, thrown into a blender, blended into a satisfying texture that is chilled to perfection. It's light, refreshing, tasty and FAST!
You can serve it in pretty bowls, or put it in a mug and slurp it down. You can do whatever you want.
If you serve this to guests, they will be so blown away by the flavour explosion, they won't know what hit them!

You will need:
Serves 6 sml. portions
2 1/2 cups Watermelon, chopped
3 medium-sized Tomatos, peeled and chopped
1/2 cup (packed) Cilantro, chopped
1/2 Red Bell Pepper, chopped
1/2 sml. Shallot, chopped *Optional to leave out
1 sml. clove of Garlic, chopped *Optional to leave out
1 Lime, juiced
1/4 tsp Chilli Flakes
Salt and Pepper to taste
Basil, sliced for garnish
Place all the ingredients except the basil into the blender and blend till smooth, but leaving some texture. The reason for chopping your ingredients before adding to the blender is, you don't want to over blend, for you run the risk of the gazpacho being too liquid.
Pour into serving bowls and garnish with basil, extra cilantro, chill flakes and lime juice.
Chill in the fridge for 30 minutes.
