Pad Thai In 10 Minutes!
Summer is around the corner and you know what that means?! Summer gatherings with friends and families, bbq's and long weekends. This quick and easy Pad Thai dish will sure be a winner at any gathering. People will be licking their plates and chopsticks, screaming, "GIVE ME THAT RECIPE BITCH!"
Just throw a few flavourful ingredients into the food processor, blend till smooth and pour over rice noodles. You can add any veggie you like, or keep it just noodles. You can even serve it with tofu if you like. We added tofu marinated in hoisin sauce and it was perfection.
The great thing about this recipe is that it is gluten free and vegan, so everyone will be a happy camper.

You will need:
1/3 cup Tamari Sauce *You can use Soya Sauce, but than it won't be a gluten free dish
1/4 cup Almond Butter *If you don't have Almond Butter, you can use Peanut Butter or Cashew Butter
2 cloves of Garlic
1/4 White Onion
2 tbsp. Sriracha
2 tbsp. Coconut Sugar *You may need to add a little more if you like it on the sweeter side
A drizzle of Sesame Sauce *Not too much, it's very strong
2 Limes, juiced
Rice noodles, 4 servings worth
Sprouts
1/4 cup Shitake Mushrooms, thinly sliced *White mushrooms (Button) or Cremini will do just fine
Carrots, thinly sliced, leave raw
Green Onions, thinly sliced, leave raw
Cilantro, Mint and Basil for garnish
*OPTIONAL: Firm Tofu (sliced and pocked with holes) marinated in hoisin sauce for at least 2 hours - 24 hours in the fridge.
Place tamari sauce, almond butter, garlic, onion, siracha, coconut sugar, sesame sauce and lime juice in blender and blend till smooth as fuck!
Once your pot of water is brought to a boil, add your noodles, turn off heat and cook for two minutes.
Quickly, strain noodles and run under cold water till you can touch them. It is very easy to over cook the noodles, so act fast!
If you are cooking tofu, heat a pan to medium high and add the tofu to the pan without oil. You are looking to caramelizing the tofu.
Cook mushrooms without oil till softened, 2 minutes.
Mix all noodles, veggies and herbs with the sauce and plate!
Garnish with herbs and tofu.
