Holiday Brussel Sprouts & Sweet Potato Side Dish- Flavour Burst!
So your family invites you over for Christmas dinner and they ask you, "Dear, what are you going to eat for dinner?" You cleverly smile over the phone and reply, "Oh! I've got it covered dear old mama. Don't you worry".
You're a rockstar and have done your research and have a dish that will keep you satisfied and impress your family. 'Cause your making- ROLOVEGAN'S HOLIDAY BRUSSEL SPROUTS AND SWEET POTATO SIDE DISH!

It also packs tons of health benefits and low in added fat, so you can indulge in a few extra cookies after. You can serve this dish with mashed potatoes, vegan stuffing, green salad, anything you feel that will make your Christmas dinner special.

You will need:
4 cups of Brussel Sprouts, halved 1 LARGE sweet Potato, cubed 1 cup Walnuts, chopped 7-10 cloves of garlic, whole 1 Pomegranate worth of pomegranate seeds 1/2 Lime, juiced
SWEET POTATO Seasoning: 1 tsp Chili Flakes 1 tsp Cinnamon 1/4 tsp Sea Salt 1/2 tsp Paprika Drizzle of Olive Oil
Black Pepper to taste BRUSSEL SPROUT Seasoning: 1/2 tsp Chili Powder 1 tsp Chili Flakes Drizzle of Maple Syrup Drizzle of Olive Oil 1 tsp Coconut Sugar 1/4 tsp Sea Salt
Oven at 375 degrees
Mix the sweet potatoes with their seasonings.
On one tray, lay the sweet potatoes and add to the oven.
Mix the brussel sprouts with their seasonings.
On the other tray, lay the brussel sprouts and add to the oven.
The brussel sprouts will be done around 27 minutes and the potatoes will be done around 32 minutes.
While your veggies cook in the oven, toast your chopped walnuts on the stove. You want your pan on medium and constantly stir your walnuts so they don't burn. You know they will be done when you smell them. If you look for colouring, you run the risk of burning them. Once you smell them, remove immediately from the pan and place into your bowl. Add all remaining ingredients to your sweet potatoes and brussel sprouts, and drizzle the fresh lime juice.
