Christmas Sugar Cookies- As you know and love!


Christmas time can be hard, if it's your first Christmas as a vegan. Cookies, tarts, cakes, pies, candies and chocolates tempting you. You admire all the beautiful cookies and cry, "I wish I could have you." Well STOP! Stop crying and feeling blue for yourself. 'Cause guess what!? You CAN have it all.

It was really important to Lo that she had her sugar cookies for Christmas, so she spent endless hours trying different egg substitutes to replicate the cookie she knew and loved. With great success, she got amazing results! Now, keep in mind, Christmas is meant for indulgence and spoiling yourself. So, don't worry about calories and fat.... just enjoy! I mean, don't eat a dozen, but one or two won't kill you.

You can have so much fun with these cookies. If you wanted, you could make the dough in advance; lets say a month, and freeze it. When it comes time to decorate and bake, you take the dough out of the freezer and go to town! Make sure the decorations you pick are vegan and don't have added animal by products.

You will need:

1/3 cup Shortening, room temp

1/3 cup Vegan Butter, room temp

3/4 cup White Sugar, make sure it is vegan

1 tsp. Vanilla

Egg replacer- follow instructions on package. This recipe calls for one egg, so I used 3 tbsp. water and 1 tbsp. egg replacer, room temp.

4 tsp. Vanilla Almond Milk

2 cups, All Purpose Unbleached Flour

1 1/2 tsp. Baking Powder

1/4 tsp. Salt

Oven at 375 degrees F

Sift all dry ingredients and set aside.

With a mixing stand or a hand held blender, cream fats and sugar for 8 minutes, till light and fluffy.

Slowly add egg replacer and vanilla and cream for another 2 minutes, till well incorporated.

Add your dry ingredients in 3 parts. Alternate with dry ingredients and almond milk, starting and ending with the dry ingredients and mix till all combined.

Wrap into two discs and place in either freezer or fridge till hard.

Roll 1/4 inch thick. Cut and decorate as desired.

Cook till edges are lightly golden and firm to touch. For larger sizes, 10-12minutes, for smaller sizes start with 8 minutes.

Serve these to your friends and family and show them, you too can eat whatever your heart desires! Also, Santa will thank you for these DELICIOUS plant based sugar cookies!
