Jackfruit "Pulled Pork" Sandwiches- In 30 Minutes!
Sometimes you think that there are foods you'll never eat again because you're vegan. Like mac n' cheese, chicken and waffles, lasagna, pizza... and in this case, PULLED PORK! Well, fret no more!
We kept hearing about jackfruit or durian fruit and always wondered what the big deal was. Since Toronto is a concrete jungle, the chance of coming across this tropical fruit would be pretty slim... or so we thought. The moment we opened our eyes and went looking for it, we found it in China Town. You can get fresh; whole and cut, and canned. For this particular recipe you will need canned.
You can make this for any occasion, on any day of the week and it is so easy to make, yet impresses the masses. Even non vegans will love it, we promise. Lo has spiced up the jackfruit to absolute perfection and paired it with a creamy, citrusy coleslaw that makes you want to eat TWO! Yes, two.... they are tasty Mothah F@*$%ers!

You will need:
2 cans of Green Jackfruit, in salt water. You can buy these at your local asian markets. For us Torontonians, Dundas and Spadina is where you will find it. 1 tsp. Chili Flakes 1 tsp. Chili Powder 1/4 tsp. Ground Cumin 1 tsp. Smoked Paprika 1 tsp. Garlic Powder
1tsp. Dried Oregano 2 tbsp. Coconut Sugar
1/4 cup of your choice of bbq sauce 1 cup water
Salt and Pepper to taste Multi grain buns
For the Slaw, you will need: 1/2 Green Cabbage, thinly sliced 3 medium Carrots, grated 1 Avocado, mashed 2 Limes, juiced Salt and Pepper to taste
Mix all the spices with the jackfruit and marinate for 10 minutes.
Mix cabbage and carrots with mashed avocado and lime juice. Make sure it is citrusy, if two limes don't work, add another. Salt and pepper to taste.
Heat pan to medium high heat, add 1 tsp. olive oil and caramelize the marinated jack fruit on each side. You want to do two minutes each side.
Mix bbq sauce and water. Pour over jackfruit and place the lid on the pan and turn heat to medium low and cook for 20 minutes.
Once the jackfruit is tender, shred it with a fork and the sauce will have thickened and become like pulled pork!
Spread veganaise; if you want that extra indulgence, onto your crusty multi grain bun, place jackfruit, top with slaw and finish with fresh cilantro leaves and green onions!
