"I can't believe it's" Vegan Chocolate Chip Cookies!
We have always been in love with Lo's chocolate chip cookies way before she veganized them. Some would say, there are people who have been known to eat several in one sitting. Hehehe...Roz!
When Lo went vegan, she knew she had to veganize her award winning, crowd pleasing chocolate chip cookie. You can still eat several of these little guys, but now, there is no guilt in knowing there is any animal products in them. Even non vegans will love them. They won't even know!
The combo of the banana and coconut oil, add a subtle, but yummy background to this cookie. It is still that traditional cookie that everyone knows and loves.
They are easy to make and worth the few extra steps.

You will need:
2 1/4 cups Unbleached All Purpose Flour 3/4 cup Coconut Sugar 1/4 cup Brown Sugar 3/4 cup Coconut Oil 1/2 cup Banana, mashed 1/2 tsp baking powder 1 1/2 tsp salt 2 tsp vanilla 1 3/4 cups vegan chocolate chips
Bake at 350 degree F
With a mixer, cream coconut oil and sugars for 8 minutes till light and fluffy.
Pour in banana and vanilla and mix for 1 minute.
Sift all dry ingredients and add to banana mixture and mix till combined.
Mix in chocolate chips.
Place tsp. sized drops on to baking sheet and bake for 10 minutes. You can make the cookies any size you like, just make sure cookies are caramelized on the bottom and easy to pick up without falling apart.
Try to eat just one!
