Classic Diner Pancakes for Mother's Day! - Quick and Easy!

We have the best pancake recipe for you. They are moist, tender, light, fluffy, and the best part... easy and plant based! You will be shocked that these plant based pancakes are better than the "normal" pancake.
Spending time in the kitchen doesn't need to be painful. It can be fun and easy, and what better way to have fun, than mastering the pancake and serving it to the woman who loves you unconditionally.

You will need:
1 1/2 cups All Purpose Unbleached Flour 1 tbsp. Coconut Sugar 1 tsp. salt 2 3/4 tsp. Baking Powder 1/2 cup Banana 1 1/4 cup Almond Milk 3 tbsp. Coconut oil, melted and more for cooking Blackberries Canadian Maple Syrup
Whisk all dry ingredients in a bowl.
In your blender, blend almond milk and banana for 30 seconds till smooth.
Make a well in your dry ingredients, and pour in the liquid ingredients and the 3 tbsps. of melted coconut oil, mix till combined. Don't over mix, or pancake will be tough and rubbery.
Turn your pan at medium high and heat till you feel the heat from the pan. Add a tbsp.of coconut oil.
Pour batter to desired size, cook till bubbles appear on sides and in the middle, 2-3 minutes. Flip!
Cook till firm to touch, 1-2 minute.
Serve with blackberries and finish with maple syrup.
