Vegan French Toast- In Under 10 Minutes!

We are huge fans of veganizing our favourite recipes. You have probably noticed that most of our recipes are just that. We want to show you and empower you how to do this! We want you to still enjoy all your favourite foods, but just plant based.

We kept hearing about vegan french toast and had to see what it was about. As usual, after some research and playing around, Lo created the best vegan french toast. And what's so beautiful about this recipe, is that it can be made in 10 minutes! It's so fast and easy it's a joke.

I don't know how many times we have to tell you this, but we kid you not, no one would be able to tell it's vegan. It has the caramelized crunch on the outside and the moist and fluffy interior a french toast should have. The coconut sugar is what helps with the caramelization and the banana is what makes it fluffy. To really make this french toast shine, choose a really good loaf of bread. A crusty french loaf, or; as we prefer, a whole grain, multi grain loaf. It will keep you fuller longer and add nutritional value to your french toast.

You will need:

1/2 Banana 1/2 cup Vanilla Almond Milk 1/4 cup Coconut Milk 1 tbsp. Coconut sugar 1/8 tsp Vanilla Extract Coconut Oil to fry 8 slices of whole wheat, Whole Grain Bread Sliced Banana for garnish Unsweetened shredded Coconut for garnish Canadian Maple syrup to finish

In your blender, blend banana, the milks, sugar and vanilla till smooth, 30 seconds.

Heat pan on medium high and melt your coconut oil. Once the pan is hot, dip the slices of bread and drain excess liquid off.

Cook 2 minutes on each side. You are looking for your slices to be easy to flip. Be gentle and have patience. You will see the liquid bubble around the bread, and that's ok. Let it do its thing!

Once flipped, you will see the beautiful colour and crust.

Serve with sliced bananas and shredded coconut and maple syrup.

Dang it's good!!!
