Chilli Sin Carne & Sweet Cornbread- One Pot Chilli!

Ringing in the New Year can be hard on the body if you decide to go out on the town and party. A good way to keep energized and full throughout the night is eating a high carbed meal before you start drinking. Lo's Chilli Sin Carne is just the thing you'll need!

You can easily whip it up in the morning; let it simmer away on the stove, while you get ready for the big night. You can eat it with sweet cornbread and creamy avocado.

This chilli is full of beans, so don't stress about consuming so many beans. Just make sure your beans are salt free or low in salt... it's the salt that will make you feel bloated and gassy, not the beans.

You will need:

2 medium Onions, sml. cubed

4 Garlic Cloves, finely chopped

1 Green Bell Pepper, sml. cubed

2 cups Frozen Corn

1 19oz. can Red Kidney Beans *

1 19oz. can White Kidney Beans*

1 19oz. can Black Beans*

1 tbsp. Olive Oil

1 tbsp. Cumins Seeds - ground

1 tbsp. Black Pepper Corns- ground

1 tbsp. Chilli Powder

1 tsp. Salt

1/2 tsp. All Spice

1/4 tsp. Cayenne Pepper

2 tsp. Unsweetened Cocoa Powder

1 tbsp. Cornmeal

2 cups Tomatoes - pureed

1/2 cup Vegetable Stock

*We listed three types of beans. You can use all three or just add two kinds.

Heat pot to medium high with olive oil. Add peppers and onions, cook 5 minutes.

Add garlic and cook for one minute.

Add ground cumin, cracked black pepper corns and salt, cook 30 seconds.

Add chilli powder and cook for another 30 seconds.

Add cocoa powder, all spice and cornmeal and cook for 30 seconds.

Add all liquid ingredients, stir.

Add beans and corn and reduce heat to medium low and cover with a lid and leave agar to simmer and reduce.

After an hour, taste it and if it needs more salt, and a pinch more.

Vegan Cornbread:

Oven at 425 degrees F

1 cup Cornmeal

1 cup All Purpose Unbleached Flour

1/3 cup Sugar

1/2 tsp. Salt

4 tsp. Baking Powder

1/2 cup. Vegetable Oil

1 1/4 cup Unsweetened Almond Milk

Sift all dry ingredients. Mix all liquid ingredients into dry and whisk by hand for one minute till smooth and lump free. Literally one minute! We recommend you time it.

Bake in 9"x 13" pan for 20 minutes.

Serve the chilli with fresh avocado and you will be so pumped you ate this before going out.
