Mushroom Tofu Scramble- In 15 Minutes!


Tofu can scare people, especially when you don't know how to use it or know what it can do. It's not just for stir fry's. It can replicate so many of your favourite foods. One of our favourite foods use to be scrambled eggs. Waking up on weekends and sipping a hot cup of coffee; while slowing putting together a big delicious breakfast, is a great way to spend the morning. But you think, how can I make those memorable scrambled eggs or westerns or fiesta egg scrambles again?

With tofu silly! With the right seasonings and with the right techniques you can have that all back, and more. Without the added cholesterol, your heart will thank you.

In Roz's Tofu Scramble, she shows you how to season it to perfection and add delicious veggies that will make your mouth water. While it is cooking in the pan your partner; possibly a meat eater, will creep up and say, "Mmmm... that looks good. Can I have some?" Damn right you're gonna have some! 'Cause it's frick'n da bomb!

Trust us when we say, you can make any dish you love vegan and show those meat eaters that eating plants is delicious and fun. You just need to season accordingly... that's it.

So, the next time you have a quiet weekend, make this and let us know. You can even eat it with tortillas and salsa or guac, or you can roast potatoes, or make a big green leafy salad, or simply eat it on its own. The world's your oyster... haha!

You will need:

1 package, Organic, non-GMO Tofu (Roz used extra-firm, but medium is nice too!) - crumble this tofu into small pieces until it resembled scrambled eggs. 1/2 tsp Chili Powder 1 tsp Turmeric 6 Mushrooms, sliced 1/2 Zucchini, sliced 1/2 Onion, sliced 1 Garlic, grated 12 Cherry Tomatoes, halved

Salt to taste

Add all your seasonings to your tofu and set aside.

Heat your pan to medium high with no more than a tsp. of olive oil. Add your mushrooms and onions and cook for 2 minutes.

Add zucchini and cook for another 2 minutes.

Add tofu and cook till veggies get tender.

At this point it's gonna start to smell AMAZING! You will then add your tomatoes. Cook for another few minutes. Now! Add your garlic and only cook for a few extra minutes.

Taste it and if it needs more salt, add a pinch more.

We kid you not, does this not taste like eggs? If anything, it tastes better. Right?
