Mac'N'Cheese Baby!!- Soy Free!


Did we just say Mac'N'Cheese?! Hell yes we did!!

We don't dick around when it comes to comfort food. You will notice that when you make the transition and you crave those comfort foods you once ate and loved, they are mostly made with soy. Not that we want to stop you from eating soy, but for some of us; like Lo, you could have an intolerance and eating soy just won't do. And if this is your case and you feel there is no hope to eating those vegan comfort foods, we have answered your prayers.

That's why this Mac'N'Cheese is amazing! It is soy free, creamy and zingy like a cheddar sauce should be.

You will need:

1/2 cup Yukon Gold Potatoes, cubed 1/2 cup Carrots, cubed 1/2 cup Water 1/3 cup Raw Unsalted Cashews 1 tbsp. Tahini 2 tbsp Lemon Juice 1 tbsp. Dijon Mustard 1/3 cup Soy Free Vegan Butter (optional- but highly recommended) 1/3 cup Nutritional Yeast 1 tsp. Thyme (fresh or dry is fine) 1 tsp. Black Pepper 1 tsp. Pink Himalayan Salt Hot sauce to taste

Boil potatoes and carrots with the water till soft.

Once the carrots and potatoes are cooked, add (including the water they are cooked in) to the blender with all remaining ingredients.

Blend till smooth and creamy.

Taste and add more salt and or hot sauce to your liking.

Pour over favourite pasta and eat with ketchup if that's your thang!

I kid you not, you will want to eat this every night!
