Oil Free Autumn Spice Soup- Quick and Easy
Sweet potatoes! Carrots! Ginger! Dates! Cinnamon! All these beautiful and healthy ingredients go into this spiced soup. This is the perfect soup for Fall and to keep you feeling warm and cozy.
Roz created this delicious soup that has no added fat. This soup is not only good at warming your soul, but it is good on your heart and your waistline. If avoiding added oil is something you need to consider for your health, Roz knows all the tricks. In this recipe, vegetable stock takes the place of oil. You would never know that this is fat free!
All the ingredients will cook harmoniously, blitzed to a creamy perfection and finished with fresh cilantro and cracked black pepper.
Don't be alarmed if you're licking the bottoms of your bowl, CRYING that it's all gone.

You will need:
1 lg. (or two medium sized) Sweet Potato, peeled and cubed 4 Carrots, cubed 1 Red Onion, cubed 1 tsp Cinnamon 2 cloves of garlic (I used large cloves) 1 piece of Ginger, about the size of a thumb, peeled
3 cups of Vegetable Stock 4 cups of Water The tiniest sprinkle of salt 3 Dates Freshly chopped corriander Fresh ground pepper
Cook onions in a pan with a bit of salt to release it's juice, while having your stock in a pot coming to a boil.
Once onions start to cook and get transparent, add cinnamon and grate the garlic and ginger. Add stock to your pan if it starts to stick. Cook 2 minutes.
Once the stock is boiling, add sweet potatoes, carrots and cooked onion mixture. Add the water to cover. Place a lid and cook on medium heat, till vegetables are tender, about 30 minutes.
Place the soup into your blender with the dates and blend till smooth. This may take two or three times to do. be careful not to burn your self!
Finish with black pepper and garnish with fresh cilantro.
