Whole Wheat Blueberry Pancakes - One Bowl Recipe!
Weekend morning's are perfect in spending a little extra time in making breakfast. A big stack of hot, fluffy pancakes are one of life's little pleasures. The maple syrup, the fruit and the cake like texture, is pure heaven in a bite. Who doesn't want to eat these on the regular?
You can be so creative with pancakes. You can use any kind of fruit or berry you like, you can add spices to the batter and other grains to make it heartier, even the sauce you add at the end, can be whatever you like.
Roz's pancakes are a perfect example of a beautiful and healthy vegan pancake that anyone would love. Pair these delicious pancakes with a tofu scramble, or baked "home fries", or baked beans, or even a green leafy salad.

You will need:
1 cup whole wheat flour 1 tsp baking powder 1/4 tsp baking soda 1/4 tsp salt 1 cup non-dairy milk 1 tsp apple cider vinegar 1 mashed spotty banana 1 tsp ground flax seeds 1 tbsp coconut oil 1 tsp cinnamon Blueberries!
Mix all dry ingredients.
Mix all wet ingredients.
Mix the wet into the dry and add as many blueberries you like. Let sit for 30 minutes for the batter to relax.
Heat a tsp of coconut oil in a pan at medium high heat. Spoon preferred size of batter.
Cook till bubbles appear all over, flip and cook till blueberries are bursting.
Serve with more blueberries and maple syrup.
