Kale Basil Pesto Pasta- In 10 Minutes!


When you decide to go vegan or plant based, it really is a life style change. Not a diet. Some of us can jump right in and go cold turkey and say, "bye bye turkey"; or for others, slowly wean themselves off of meat and dairy.

You have to set an intention as to why you want to; or for some, have to make this change. Setting your intention is key! Ask yourself, is it health, the planet, the animals or is it all of them? Or is it because you know you need to make a change and are curious? There are no wrong reasons to go plant based.

Let's keep our furry friends as our furry friends, let's have optimal health and live happy healthy lives, and let's preserve this beautiful planet for as long as humanly possible.

To kick start your transition, Lo shares with you her Kale Basil Pesto Pasta with you. It is delicious, healthy and fast to make. All you are cooking, is the pasta. You can turn this into a gluten free vegan dish if need be.

This dish speaks volumes as to why Lo went vegan. Her skin was her concern and she needed to make a change. All these ingredients have proven affects to help clear up acne and give glowing, radiant skin. Because the sauce is raw, all the nutrients are kept in tact and paired with other nutrients that help the body absorb and use properly.

You will need:

1/2 head of kale 4 big bunches of basil 1 lemon juiced 1/4 cup walnuts 2 heaping tbsps. nutritional yeast pinch of salt 1 tsp chilli flakes And water to help puree, around 1/2 cup. Place everything in a blender or food processor and blend till smooth and creamy.

Adjust flavour if you prefer more acidic or more cheesy.

Cook Pasta and toss!!!

Lo loves to pair it with another amazing green friend... ASPARAGUS!

Remove the woody parts of the asparagus (bottom), and heat 1 tsp olive oil. Sauté 6 minutes till aldenté... you still want a bit of crunch. Add 1 lemon juiced and toss!
