Vegan Chocolate Cake - One Bowl Recipe!
Chocolate cake is held so close to our hearts. We eat it for birthdays, weddings, celebrations; and for most women, when we are feeling the monthly blues. Who doesn't love a moist, fluffy, rich slice of chocolate cake? We know we do.
You think, "how can this be? Vegan chocolate cake?! What?! No?"... YES!
Roz perfected the chocolate cake and has proven again, you don't need dairy to create a beautiful dessert. All you need to know is how to switch up the dairy ingredients with the right plant based ingredients. And you are probably thinking, "it's too hard to know which ingredients to use" or, "I don't know where to get those ingredients?" Well you're in luck! That's why we are here. To guide you, to teach you and to show you how. Nowadays, local grocers carry a variety of plant based options, you just have to remove those blinders and LOOK!

You will need:
1 & 1/4 cup of Whole Wheat Flour 1/2 tsp Salt 1 tsp Baking Soda 1 tsp Apple Cider Vinegar 3/4 cup Coconut Sugar 1/3 cup Coconut Oil 1/2 cup Unsweetened Cocoa Powder 1 cup Warm Water Bake at 350 degrees F for 20 to 30 minutes, depending on your pan. Pan sizes we suggest are a 8 x 8 square pan or 9" round cake pan. This recipe is pretty versatile and can bake in any size pan you prefer.
With a mixer, or by hand; that's how easy this is, cream your coconut oil and coconut sugar till smooth. About 8-10 minutes.
Add your cocoa powder and cream till smooth, for another 2 minutes.
In a separate bowl, mix your baking soda and apple cider vinegar... this will take the place of your eggs and add the lightness and tenderness. Don't you just love science?
Your baking soda mixture will fizz up, add to cocoa mix. Stir.
Now! Add your vanilla, give a quick stir and lastly, mix in flour and salt till combined.
Place in a greased pan and bake till the house is filled with that delicious smell!
Cool on a rack for 10-15 minutes and flip out of pan to cool fully before icing.
Top with vegan icing... or not... and add any fresh berry or berries your heart desires.
