Guilt Free Chocolate Chip Oatmeal Cookies - One Bowl Recipe!
Roz's guilt free Chocolate Chip Oatmeal Cookies are just the thing for you if you are looking for a fat free treat. What makes this cookie so special is that there is no added fat! The brilliance of what a banana and a flax egg can do, will shock you!
The flax egg is a miracle! It is a great egg replacer when making cookies and other baked goods, and you also get some extra fiber into your diet, which is another plus to this cookie. The banana is what will replace your butter. Bananas are perfect for tenderizing, adding moisture and for creating that fluffiness that we all know and love.
These cookies are so great. You can have them for breakfast and maybe eat with a schmear of almond butter. Or if you wanted to impress your friends, you could serve them for a dinner party and individually serve them with whipped coconut cream and fresh berries.

You will need:
1Flax Egg: 3 tbsp warm water+ 1 tbsp ground flax and mix and sit for 10min to thicken
1 Ripe Banana, mashed
2/3 cup Coconut Sugar
1/2 cup Whole Wheat Flour
3/4 cup Quick Oats
1/2 cup Vegan Chocolate Chips
1 tsp. Vanilla
1/2 tsp. Baking Soda
1/4 tsp. Salt
Have oven @ 350 degree F
Mix your mashed banana with coconut sugar till smooth.
Add your flax egg and mix till incorporated.
Mix all dry ingredients and add to your banana mixture. Don't over mix, just till mixed.
Add chocolate chips and mix again till incorporated.
Place 1 tbsp. drops of batter on to the baking sheet and bake for 13 min or till cooked.
